Chaas is a thin, savoury buttermilk made by blending curd with water. Cucumber and mint make it especially refreshing, and a pinch of roasted cumin gives it a gentle warmth.

Blend it briefly for a light froth on top.

Swaps, storage and serving

Substitutions

  • Dairy-free: use an unsweetened plain soya or coconut yoghurt. The taste and thickness will differ.
  • No blender: grate the cucumber, chop the mint very finely and whisk everything in a jug.
  • Thicker or thinner: use less water for a thicker drink, or more for a lighter one.

Storage

Chaas is best fresh. If you make it ahead, keep it covered in the fridge (0–5°C) and drink it within 24 hours. It separates as it stands, so stir or shake before serving.

Serving suggestions

Serve alongside vegetable poha, khichdi or an afternoon snack such as roasted chana chaat.
