Roasted chana (bhuna chana) is roasted Bengal gram, sold ready to eat. Tossed with chopped vegetables, lemon and chaat masala, it makes a tangy, crunchy snack with no cooking at all.
Mix it just before eating: the chana starts to soften once the lemon juice and tomatoes go in.

Swaps, storage and serving
Substitutions
- Sprouts: replace half the chana with steamed moong sprouts for a softer, fresher chaat.
- Fruit: a diced apple or pomegranate seeds add sweetness.
- Less heat: leave out the green chilli; chaat masala still gives plenty of flavour.
Storage
Best eaten as soon as it is mixed. You can chop the vegetables up to a day ahead and keep them covered in the fridge (0–5°C), with the chana stored separately in an airtight jar.
Serving suggestions
Pair with a glass of cucumber-mint chaas for an afternoon snack.
